An afternoon with Daddy

Mom had a Dr. appt. today so daddy and Carl got to spend the afternoon together. It just so happened that the local grocery store had the Oscar Meyer Weinermobile there today (or as Carl has been calling it the hotdog truck) So dad and Carl went to check it out and stopped for hotdogs at the local drive-in on the way home. And I've been hearing all about the hotdog truck since I got home:)

Come and sit awhile

The weather today was quite a change from yesterday, it was pouring all morning. So Carl and I decided to make some cookies. I found a recipe for breakfast cookies and tweaked it a little to what I had on hand. Carl gave his approval and mom was happy because this is a semi-healthy breakfast I can give him in a pinch:)

I got that adorable Thanksgiving tablecloth at Goodwill this past summer for $1.99 and the cute little vintage coffeepot I picked up a few weeks ago for $1.50!! Gotta love the Goodwill!!

What's Cookin' Today

With the gorgeous fall weather we had today I couldn't help but try out a few new recipes in the kitchen. Both might I add were quite tasty:)

Pumpkin Dump Cake:

15 oz can pumpkin

12 oz can evaporated milk

3 eggs (beaten)

1 c. sugar

1/8 tsp salt

1 1/2 tsp cinnamon

1 tsp ground ginger

1 Tbsp vanilla

1 pkg. cake mix ( I used Betty Crocker Butter Pecan)

1 1/4 cup melted butter

Mix pumpkin, milk, eggs, sugar, salt, spices, and vanilla until smooth. Pour into an ungreased 9x13 pan. Sprinkle cake mix over the top and drizzle melted butter over that.
Put in 350* oven for about 35-40 mins.

Baked Cauliflower:

Every other week we get a produce box delivered to our house this week it contained cauliflower and this recipe. I just had to try it and am glad I did!

1 head of cauliflower

2 tsp of mayo

2 tsp dried mustard

1/2 cup parmesan cheese ( I used Kraft)

1/4 cup butter cut into little pieces

Wash and cut up cauliflower and then steam for about 20 min. Drain and place in casserole dish. Mix together mayo, mustard, and cheese and spread over the cauliflower. Dot with your pats of butter.

Bake at 375* uncovered for about 25 min or until the cheese starts to brown.

Enjoy!

A Beautiful Fall Day

Today the sun was shining and the weather wasn't too chilly so we decided to make the most of it.
